I add gochujang when I want spice and depth in this type of sauce situation. A non spicy way to add depth would be fermented black bean paste. Usually I do soy sauce, gochujang, sugar, maybe rice vinegar. Sesame oil and seeds to finish. You can add pepper flakes or powder (gochugaru) for even more kick.
