I have fiber internet service in which the ONT connects to the existing Coax in my house then to the modem/router.
I had poor WiFi connectivity in some parts of the house and I tried a WiFi extender/booster and Power Line Ethernet which both worked but what I ultimately settled on was…
I bought a couple of cheap Co-ax-WiFi-Ethernet extenders and connected them to coax outlets around the house.
You can find brand new ex Verizon units on eBay for about $20, I think I paid $11 for mine.
They work perfectly giving me much better WiFi at the back of my house and an Ethernet connection for my living room TV.

Not sure if they would work in your case but they might be worth looking into.
This solution requires that there already be a MOCA network for them to attach to. Your FIOS ONT creates this in your case. OP would need another device like this to create the network before these extenders would become useful. At that point, they'd be much better off going mesh.
