You seem to really want to do this. Based on what you posted above it is pretty low risk - lots of upside and if it doesn’t work out you can probably go back to something close to what you have now until retirement.
What we have been talking about is the feasibility of commuting to his office to work - flying in each week and spending 3 days in office with other two days remote at home.
I didn’t see details about your spouse but if you have one you need to make sure they are onboard with the travel. As long as your spouse is ok with it and the future employer is willing to pay for it I don’t see an issue with the travel - it’s an easy hour and a half direct flight. Your kids are out of the house.

If you do this, insist on flying out Monday or Tuesday morning and returning Weds or Thursday evening - no weekend travel. You’ll want some flexibility built in so you can be home for any important family things on a week night and can also be present for any meetings or events that require you to be in the office certain days. At a minimum I’d insist they pay for all flights and lodging, otherwise I wouldn’t take it. Ideally you’d also get them to give you some sort of meal allowance and a rental car, pay for membership in an airline lounge, and let you put all travel costs on personal cards (for points) with prompt reimbursement, but I wouldn’t blow up the deal over any of this.

For context, I fly about 100 segments a year and stay in hotels about 100 nights and have been doing that or more for over a decade. There are lots of people who travel this much or more. One good thing about it is as a result I have top tier status and tons of points which has paid for some pretty amazing family vacations each year.
