With respect to Johnny Thinwallet's hikes at Arches - we completed those in one full evening and the next day (at Landscape Arch, we turned around there and did not complete the Devil's Garden loop). As your kids seem to be into hiking, you may want to try to obtain a ranger led tour through the Fiery Furnace - we were unable to get them. Have done all of JT's listed hikes at the Island in the Sky both times we were there.

In Capitol Reef, Hickman Bridge (of course), Grand Wash/Cassidy Arch, Cohab Canyon to North and South Fruita overlooks. Plus all the short ones. We did Hickman early this summer and had the arch to ourselves the majority of our time there.

For Bryce, we really like the Queens Garden Loop with either Wall Street or Navajo to get back up to the rim. Also Fairyland Loop Trail. Plus walking along the rim is always relaxing.

If you do stop at Kolob Canyons in Zion, we like the Taylor Creek Trail to the Double Arch Alcove. Kids enjoy crossing over the creek multiple times, some we saw just walked down it more or less.

Although we stopped at Goblin Valley State Park last time and walked around the main area (there is a nice covered picnic area there that we used), with your time schedule I would probably pass.
