I’m definitely considering San Gimignano even though people say it’s very touristy. Just feel it’s a city that needs to be visited in this region of the country. How long ago since you have been ?Siena is an easy train ride from Florence Santa Maria Novella train station.
If you are find of medieval Italy, San Gimignano is the one that stands out on your list: it is one of the few cities that has medieval towers intact throughout the city. The Etruscan museum there is worth the price of admission.
Pretty sure there is a state subsidized enoteca in the city walls near the Centro where you can get local wines by the glass, bottle or case at close to cost and had good food. If driving, a slight detour to Monteriggioni would afford a spectacular medieval vantage point. It’s mentioned in Dante’s Inferno, Canto XXXI. It’s sparse- just a walled hilltop fortress surrounding a central piazza with a few good restaurants and shops- but impressive.
