I suspect that commercially processed smoked salmon either uses hot smoke to kill the parasites, or uses previously flash frozen fish.
Both cold- and hot-smoked salmon are sold in stores. They look and taste very different; hot-smoked salmon has the texture and color of cooked salmon, because it is basically cooked.
