Both cold- and hot-smoked salmon are sold in stores. They look and taste very different; hot-smoked salmon has the texture and color of cooked salmon, because it is basically cooked.I suspect that commercially processed smoked salmon either uses hot smoke to kill the parasites, or uses previously flash frozen fish.
